Each and every family has holiday traditions. What are yours?

The traditions in our family haven’t really evolved that much over the years. Long gone are the days when my sister and I barely slept until 6 am and then woke each other up and rushed downstairs, so eager to see what Santa brought us. Now that we are both married, we’ve created our own traditions, but the traditions of the whole family still reign. We don’t usually get around to eating Christmas lunch until at least noon and we always have some delicious brunchy fares.

This slow cooker breakfast casserole is a hit. It requires minimal effort on the front end, which leaves plenty of time for coffee, present opening, or spending time together. It’s ready when you are, a one pot wonder, and contains all of the essential breakfast dishes in one. Sounds to me like the best Christmas present, EVER. I know you’ll agree.

When I recently had some friends over for a holiday breakfast, they couldn’t believe that you can make breakfast in a slow cooker. Of all the breakfast casseroles I’ve had in my life (and that’s a lot because I love them), this is definitely a winner. You can customize it to make it your own. Last year, I added chicken sausage and this time I added crispy, crunchy bacon on top. Adapt it for your audience.

Chop four or five green onions. Set aside.

Spray the slow cooker with non stick spray. Place half of the potatoes in the bottom of the slow cooker. Top with half of the cheese and half of the green onions. Layer the remaining potatoes, cheese, and green onions on top.

Combine the eggs and milk with the salt and pepper.

Pour this mixture over the hash brown layers.

Set the slow cooker for 4 hours on high or 8 hours on high.

Once you’re ready to serve, top with a few green onions and enjoy. We like to serve it with a side of ketchup (mainly because we serve ketchup with everything around here…that’s tradition too).

Slow Cooker Breakfast Casserole

Prep Time: 5 minutes

Cook Time: 4 hours

Total Time: 4 hours, 5 minutes

Crunchy, cheesy, and full of flavor...this easy breakfast casserole will be a hit with family or friends. This dish takes 5-10 minutes of prep and that's it!

Ingredients

  • 20 oz bag of refrigerated hash browns (I found these next to the bacon at the grocery store)
  • 12 eggs
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz cheddar blend cheese pre-shredded
  • 4 oz mozzarella pre-shredded
  • 1 cup green onion, diced plus a few more for topping
  • 4 slices of bacon, cooked for topping (optional)

Instructions

  1. Spray the slow cooker with non stick spray. Place half of the potatoes in the bottom of the slow cooker. Top with half of the cheese and half of the green onions. Layer the remaining potatoes, cheese, and green onions on top.
  2. Combine the eggs and milk with the salt and pepper. Pour this mixture over the hash brown layers.
  3. Set the slow cooker for 4 hours on high or 8 hours on high.
  4. Once you're ready to serve, top with a few green onions and enjoy. (If you want to top the casserole with bacon, just cook it separately and then sprinkle it over the top)

Notes

You can make this recipe with bacon, sausage, or without meat. If you're using bacon, just top it with crispy bacon before serving. Otherwise, the bacon will be soft and chewy if you cook it in the casserole. If you include sausage, you can chop it up and cook it with the casserole. Just add it into the hash brown layers.
