Sweet & Spicy Almonds and Pecans | Bites of Bri

During the holiday season, we usually have something planned every single weekend night. Whether it is holiday get togethers with friends, family, or co-workers, the holiday season is packed with social events and is so much fun.

All of these plans can make it difficult to find time to cook or bake! However, these nuts are perfect for those of us short on time who need something festive to take to holiday events or package as gifts.

If you’re in need of a quick homemade hostess gift, a quick appetizer or a dessert snack, these sweet and spicy pecans and almonds will be a popular dish at your next get together.

You can use whatever nuts you have on hand. After Thanksgiving, I found myself with a 5 lb bag of whole pecans, so I decided to use them in combination with some almonds I had in the pantry. A mixed nut combination would also be great, or you can stick with one variety. Go ahead and use whatever you have.

Once these babies came out of the oven, I couldn’t stop eating them. Seriously…I couldn’t wait for them to cool so I could package them up and get them out of my sight. In addition to smelling absolutely divine, they were also very addictive.

Preheat your oven to 300 degrees. Line a large rimmed baking sheet with parchment paper.

In a medium sized mixing bowl, combine the white sugar, brown sugar, cinnamon, salt, and cayenne pepper.

Whisk until there are so lumps and the mixture is smooth.

In another medium sized bowl, add the nuts. You can use whatever you have on hand. I used 4 cups of nuts total, about 2 cups of whole pecans and 2 cups of almonds (both unsalted, whole, and un-toasted).

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 4 cups nuts

These nuts have just a touch of heat to go with their sugary sweet coating. Serve these at your next cocktail party, in a holiday salad, or wrap them as a hostess gift.

Ingredients

  • 4 cups (roughly 1lb) nuts (any variety or a combination)
  • 1/3 cup light brown sugar
  • 2/3 cup white granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cayenne pepper (or less if desired. Even with 1/2 tsp these have a slight kick)
  • 1 tsp kosher salt
  • 1 egg white (or 1/3 cup of egg white if you’re using the pre-packaged kind)
  • 1 tbsp water

Instructions

  1. Preheat your oven to 300 degrees. Line a large rimmed baking sheet with parchment paper.
  2. In a medium sized mixing bowl, combine the white sugar, brown sugar, cinnamon, salt, and cayenne pepper. Stir until there are so lumps and the mixture is smooth.
  3. In another medium sized bowl, add the nuts. You can use whatever you have on hand. I used 4 cups of nuts total, about 2 cups of whole pecans and 2 cups of almonds (both unsalted, whole, and un-toasted).
  4. In a small bowl, whisk 1 egg white and the water. Whisk until frothy and foamy. Pour this mixture over the nuts.
  5. Stir the spice mixture into the nut mixture until all of the nuts are coated.
  6. Pour the nut mixture onto the lined baking sheet. Spread the nuts into an even layer.
  7. Bake for 15 minutes. Remove from the oven and stir. Bake for another 15 minutes. Remove them from the oven and stir once more. Allow the nuts to cool, then break up any clumps that remain.
  8. Store in an air tight container.

Notes

Use any variety of nuts or a combination of mixed nuts. If you wanted a spicier combination, double the cayenne pepper.
