Slow Cooker Chicken Salsa Verde | Bites of Bri

Happy New Year! 2014 is going to be a good year. Don’t you think?

The last couple of weeks have been craaaaaazy. So in an effort to find a quick, easy, and light dinner the other night, I threw together this quick salsa verde chicken. Once the cooking time was complete, I knew I had found a winner.

Winner winner chicken dinner. Shameless, aren’t I?

But seriously. This chicken would be great for a super bowl party, Mexican fiesta, or Cinco de Mayo festivities. All of the above. Add this chicken to tacos, enchiladas, salads and you will not be sorry. It is hard to imagine how something with so few ingredients can be loaded with so much flavor.

Add 1 1/2 pounds of chicken breasts to the slow cooker. This is usually 3 breasts, give or take. Add the garlic powder, oregano, and salt.

Add a 12 oz jar of salsa verde. You can use a spicy or mild salsa, depending on your personal preference. And, if you aren’t a fan of salsa verde, feel free to use another salsa.

Add 1/2 cup of chicken broth and make sure everything is combined.

Cook for 4 hours on high. Once the cooking is complete, remove the breasts and shred them using two forks. Add them back to the slow cooker until you’re ready to serve.

Slow Cooker Chicken Salsa Verde

Total Time: 4 hours, 5 minutes

This chicken salsa verde is a super easy meal that cooks in the crockpot. The chicken is juicy and tender, full of flavor from the salsa verde. The perfect chicken for your tacos, quesadillas, or burritos.

Ingredients

  • 1 1/2 pounds of chicken breasts
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 12 oz jar salsa verde (or another variety will work too)
  • 1/2 cup chicken broth

Instructions

Notes

Use a salsa verde that you like...Spicy and mild both work in this recipe. And, if you aren't a fan of salsa verde, use any other salsa.
