Don’t salads just seem like a good post for a Monday? I don’t know about you, but I always feel like I’m overindulging on weekends. Not to worry, this salad will set you straight and can be assembled in minutes! What could be better than that?

I had a salad at a restaurant lately and I could.not.stop.talking about it. It was AWE-SOME!

So, I’ve told you guys before that I have a bad habit of pre-selecting my choices when I’m going out to eat. A few weeks ago though, we ended up grabbing an impromptu lunch out and instead of going with my favorite salad, I decided to go out on a branch and get the daily special and my only regret? I wished it was bigger!

To me, this salad was the epitome of freshness and health. The salad packed a major crunch and was full of flavor. So, as these things go for me, I talked about it for the next two days and knew that I would need to replicate it as soon as possible. Oh, and I also recommended that the restaurant add it to their full menu. We’ll see how that goes…

For now I can make it at home and I will. Every single day if I please. Thankyouverymuch.

Add the dressing ingredients into a mason jar or bowl. Shake (or stir) to combine.

Add the lettuce to a salad bowl or plate and add all of the chopped ingredients. Top with the cooked chicken. Toss with dressing! It is that easy!

Yield: 2 entree sized salads

Thai Crunch Salad is an easy to assemble, quick, healthy, flavor packed salad with major crunch. Topped with peanut dressing, this salad is the perfect lunch or light dinner.

Ingredients

  • 1 chicken breast, cooked
  • 1/2 cup mung bean sprouts
  • 1/2 green bell pepper, sliced
  • 3 green onions, sliced
  • 1 cup coleslaw mix (cabbage and carrots)
  • 1/2 cup snow peas, sliced
  • 2 heads romaine, washed and torn
  • 2 tbsp peanuts, chopped
  • 1/3 cup mandarin oranges
  • Dressing
  • 1 garlic clove, minced
  • 1 tbsp canola oil
  • 1 tbsp peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce, low sodium
  • 1/4 tsp brown sugar
  • 1/8 tsp red pepper flakes
  • 1 tbsp water

Instructions

  1. Add the dressing ingredients into a mason jar or bowl. Shake (or stir) to combine.
  2. Add the lettuce to a salad bowl and add all of the chopped ingredients. Top with the cooked chicken. Toss with dressing. It is that easy!

Notes

Use leftover chicken, rotisserie chicken, or grilled chicken...Whatever you have on hand. This would make for a great picnic salad. Double or triple to feed more people.
