Aaaaand, we’re back with the next edition of Grilled Cheese month.

After spending tons of time in Charleston, we are very familiar with Pimento Cheese. So it comes as no surprise that Ben recently fessed up and told me he orders a Pimento Cheese every night before school at his happy hour spot. I mean, really???? I did try packing Ben some delicious snacks back in August when he started grad school. That lasted for about a week before Ben realized it was much easier, and apparently much more fun to visit the bar next to school than brown bag it with a snack. Go figure. Who can blame him?

So this infamous Pimento Cheese happy hour snack was inspired by Wit and Wisdom, a Baltimore bar located right next to the Hopkins business school. When we visited Baltimore for my birthday, I got a chance to taste it. Holy wow. No wonder Ben ditched the homemade (but frozen) burritos I had been packing. It’s official. My snacks were lame compared to this Pimento Cheese.

So, as with most of my favorite foods, I got to thinking what else I could do with it. I had a few off the wall ideas, some of which may eventually make their way here, but the one idea I could not get off my brain was Pimento Cheese Grilled Cheese. And, since it is Grilled Cheese month, I thought it was the perfect time to debut it. PS- I just typed Pimento Cheese month…now that would be something!!!!

Whether you’re making Pimento Cheese for an appetizer or for a Grilled Cheese, it is super easy to make. In fact, you can make it in about 10 minutes. No cooking required. And if your cheese drawer looks anything like ours, you may have everything on hand. If you wanted to skip the steps of making pimento cheese and skip right to the grilled cheese part, Palmetto Cheese is a personal favorite that you can find at most grocery stores.

Start by grating the white and yellow cheeses. Only use freshly grated cheese for this recipe. Don’t use the pre-shredded stuff or you’ll be disappointed in the texture of the Pimento Cheese.

Combine the mayonnaise and the softened cream cheese in the same bowl as the shredded cheeses. Add the drained pimentos, salt and pepper.

Stir to combine. If you’re just making pimento cheese to use for later, you’re all set. Refrigerate until ready to serve.

For Pimento Cheese Grilled Cheeses, add 3 heaping spoonfuls of Pimento Cheese to a slice of bread. Place another slice of bread on top. Add 1/2 tbsp of butter to the bread and place it butter side down in the heated pan.

Allow the bread to get golden brown, then add 1/2 tbsp of butter on the top piece of bread and flip. Allow the grilled cheese to cook until golden brown. To serve, allow it to cool slightly and slice the sandwich in half.

If you’re making many grilled cheeses to feed a crowd, you can add them to a sheet tray and keep them warm in a 250 degree oven until all of the sandwiches are ready.

Pimento Cheese Grilled Cheese | Bites of Bri

Pimento Cheese Grilled Cheese

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 3-4 cups of pimento cheese

Pimento Cheese Grilled Cheese is the creamiest, most drool-worthy grilled cheese I've ever had. It's the Grilled Cheese of your dreams.

Ingredients

  • 2 cups grated yellow cheddar cheese
  • 1 ½ cups grated white cheddar cheese
  • ¾ cup mayonnaise
  • 4 oz cream cheese, softened
  • 2 oz pimentos, chopped (this is half of a small jar)
  • ¼ tsp salt
  • ¼ tsp pepper
  • bread for sandwiches (I used a white artisan loaf)
  • butter

Instructions

  1. Start by grating the white and yellow cheeses. Only use freshly grated cheese for this recipe.
