What a weekend! Ours was jam packed with activities from Friday night to Sunday and now I feel like I need another weekend for the recovery. Whew! I’m exhausted!

Seriously though, our weekend was filled with fun activities and some not so fun ones… final exam prep for Ben. Yuck! We also hit the farmer’s market for our first time this season after missing the first one last week when we were out of town. It’s definitely still gearing up and I think it will be getting better every week for the next few weeks until all of our favorite vendors are there.

It was quality over quantity this week and I was pumped to see strawberries. They were so juicy and delicious. I also grabbed some Swiss Chard, a favorite and some radishes. Random, right?

Onward to the pizza…OHMYGOSH. We’ve been eating some major asparagus over here and it’s been so good.

I have a firm philosophy on pizza and it’s this…pre-cooking items for a pizza is a major pain. Not only does it mean more dishes (yuck) but it takes more time and more preparation; it isn’t for me. Enter the challenge of finding a way to include asparagus without having to sauté it first. Shaved asparagus it was!

Don’t let the step of shaving asparagus intimidate you…It couldn’t be easier as long as you have a vegetable peeler like this one.

Preheat the oven to 500 degrees.

Start by gathering half a bunch of asparagus, the thicker the better. Take your peeler and, holding the top end of the asparagus, peel down the stalk. Repeat 2-4 times on this side and then flip the asparagus over and repeat on the other side until you have a thin plank-like piece of asparagus. I don’t worry about the tip because they cook quickly and are gorgeous on the pizza so I like to leave them whole. Easy! Continue until you’ve shaved the bunch. Save the trimmings. These are delicious too!

I used pre-made dough for this pizza and it had been sitting at room temperature for a few minutes. Stretch it out over a cookie sheet or pizza stone if you have one. Add a little oil and spread it over the dough with your hands.

Cut the block of low-moisture mozzarella in half and with the one half, cube it into small pieces. Thinly slice the remaining half for the pizza. The cubes are for the stuffing of the crust! Yum! Low moisture mozzarella is important because it keeps the pizza from getting soggy like it sometimes can with fresh mozzarella.

Then, taking your fingers, press a small piece of mozzarella into the outer crust and roll the crust until all of the cheese is covered. Continue working your way around the outer crust until complete. If you want to skip the stuffed crust, you could just omit this step, but…cheesy crust? We might not be friends anymore if you skip it! It’s the best surprise when you bite into it.

Thinly slice a garlic clove as thin as you can get it and sprinkle the tiny pieces over the dough.  Add a ¼ cup of parmesan cheese over the dough, but not over the crust. Add the slices of mozzarella on top of the parmesan.

To add the asparagus, add the spears first and then top the spears with the shavings so that they crisp when cooking.

Add the feta cheese crumbles on top of the asparagus.

Right before placing the pizza in the oven, add a drizzle of olive oil over the asparagus. One teaspoon should do it.

Bake for 15-20 minutes or until the crust is golden brown and the cheese is bubbling.

Top with fresh basil and a drizzle of balsamic vinegar.

  • 1 store bought pizza dough
  • olive oil for drizzling
  • 1 lb low moisture mozzarella
  • ½ bunch of asparagus, trimmed
  • 1 garlic clove
  • ¼ cup parmesan cheese
  • 3 tbsp feta cheese
  • basil for topping
  • balsamic vinegar for drizzling

Notes

Make sure to sure low moisture mozzarella for this recipe. You can find it in the cheese aisle near the shredded cheeses. It is slightly drier than fresh mozzarella.

    Wow, the shaved asparagus is sheer genius. I love roasted red peppers on pizza, but the work to make them up beforehand is ridiculous! I just tell myself to order a pizza out for 12 bucks if I’m going through all that work. Your method is just so wonderful…will give it a whirl!!!

    That cheesy crust is melting my heart.
