Wow! What a weekend. After our action packed weekend last week, we vowed to do less this weekend and we massively failed. I mean, massive failure on all levels. We seriously packed so much in and it’s hard to pick something we could have omitted. Between a 10 year high school reunion (mine…where did 10 years go?!), a christening, a baby shower, and some house projects, the time flew by and I can’t believe it is Monday already. How was your weekend?

For the positives, we have a three-day weekend coming up! And I can’t think of a single person who doesn’t love a three-day weekend. In my opinion, they’re the perfect length. Long enough to save one day for chores and get some relaxing done on the other two days, which is just perfect.

To me Memorial Day is the official kickoff to summer so with that in mind, I have a no-cook recipe for you today that is the perfect summer appetizer. Light, refreshing, healthy, and did I say no cooking is involved? Ahhh, I love “recipes” like this. This recipe is more like an assembly, but I have a feeling you won’t mind the ease of this recipe.

To make this recipe you need a watermelon, preferably juicy and sweet because who likes them any other way? When I was buying the watermelon, I was talking to a woman at Trader Joe’s and we were discussing how to select a good watermelon. I had no idea and neither did she until a TJ’s employee came over and told us to look for a hollow sounding one. According to him, I had picked a good one. I did later verify this approach and apparently there are a few more ways to tell that you’ve selected a winner. See this post on ripe watermelons on Fifteen Spatulas.

Anyways, back to the assembly. Cube the watermelon into bite sized pieces.

Cube the block of feta. I used low fat feta for this recipe. I actually love TJ’s low fat feta. It is perfectly salty and crumbly plus you seriously cannot tell that it is low fat.

To assemble, stack the feta and watermelon with a mint leaf in between. Using a skewer or toothpick, skewer the stack. Perfect.

For added flavor, I used a reduced balsamic vinegar drizzle. This is entirely optional but also entirely delicious so that’s your call. To make the drizzle, add ½ cup balsamic vinegar to a small saucepan and reduce for 3-5 minutes until thickened. Drizzle over the skewers.

Watermelon Feta Mint Skewers

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 12-24 skewers (depending on size)

Ingredients

  • 4 oz feta cheese, in a block (I used low-fat)
  • 1/4 of a large watermelon, cubed into bite-sized pieces
  • mint leaves
  • skewers
  • balsamic for drizzling

Instructions

  1. Cube the watermelon into bite sized pieces.
  2. Cube the block of feta.
  3. To assemble, stack the feta and watermelon with a mint leaf in between. Using a skewer or toothpick, skewer the stack.

    Love this flavor combo, mint with watermelon with feta and vinegar drizzle. I was struggling with the yearly…what to bring to the Memorial Day fam get together at the Lake. Always bring plain cut of fruit, but these are so much cuter. Love finger foods that are easily picked up with toothpicks. Great presentation too! So pretty.

    I always buy the wrong watermelon, just bought another one yesterday, we’ll see how this one tastes! May have to double the dose of the vinegar dressing =)
