Grilled Jerk Chicken Skewers are slightly spicy, subtly sweet, and a family favorite for easy grilled chicken. This recipe can easily be doubled or tripled to feed a large crowd.

Let me tell you…Being a food blogger is tough. Really tough! So here’s the thing. Everyone thinks it is so much fun and the meals must be awesome. And for the most part, they are. However, there are definitely duds every now and then. Dishes that don’t make the cut due to flavors, looks, or any of the other reasons you can imagine. That’s all fine and dandy and comes with the territory.

But that’s not the tough part. That’s all to be expected. The tough part is the fact that we rarely eat the same thing EVER! I mean, almost never!!! And that’s hard when you love dishes as much as I love this one.

These Grilled Jerk Chicken Skewers are a family favorite for sure. In fact, when I started writing this post, I basically said these were a family favorite about 1 billion times then I realized I was getting a liiiiittle repetitive. So, anyways, I love ‘em. I think you will too! They may not be lookers, but these skewers rock on flavor alone.

Grilled Jerk Chicken Skewers

The marinade is super easy and also doubles as the sauce. WIN! You can marinade them while you’re at work, at the pool, or whatever and then throw them on some skewers right before you’re ready to grill.

It doesn’t get much easier than that. I should also mention that this recipe is adapted from Cooking Light a few years back, so they’re healthy too!

To make the marinade, combine the green onions, shallots, brown sugar, lime juice, olive oil, allspice, seeded jalapeno, minced garlic, and salt in the food processor. Pulse until it reaches an almost-smooth texture.
Once the marinade is complete, set aside a small bowl of the marinade so you can use it as your sauce.

Now, dice the chicken breasts into bite size pieces. Add them to a bowl or a Ziploc bag. Add the remaining marinade. Toss to coat all of the chicken. Refrigerate for 20 minutes or up to 24 hours.

Once ready to cook, skewer the chicken and preheat the grill.

Spray the grill with non-stick spray. Grill for 3-5 minutes, then rotate. Grill for another 3-5 minutes until all of the chicken is cooked through (which may take longer depending on how tightly you packed the chicken on the skewers).

Ingredients

  • ½ cup green onion, diced
  • 3 large shallots, diced
  • 1 tbsp brown sugar
  • 2 limes, juiced
  • 2 tbsp olive oil
  • ½ tsp allspice
  • 1 jalapeno, seeded and diced
  • 4 garlic cloves, minced
  • ½ tsp salt
  • 4 chicken breasts, diced

Instructions

  1. To make the marinade, combine the green onions, shallots, brown sugar, lime juice, olive oil, allspice, seeded jalapeno, minced garlic, and salt in the food processor. Pulse until it reaches an almost-smooth texture.

  4. Once ready to cook, skewer the chicken and preheat the grill.
  5. Spray the grill with non-stick spray. Grill for 3-5 minutes, then rotate. Grill for another 3-5 minutes until all of the chicken is cooked through (which may take longer depending on how tightly you packed the skewers).

Notes

If you want to skip the step of skewering the chicken, just marinade whole breasts and then grill them whole. Adjust the cooking time. The marinade is the sauce as well, so reserve some before mixing it with the chicken. The chicken can marinade for 20 minutes-24 hours.

    I love how easy these skewers are, healthy and you can triple them to feed a crowd! Perfect for the neighborhood BBQ. Too funny that you don’t get to eat foods twice because as a food blogger you gotta move onto the next thing! But your family probably loves it!

    My husband will be SO HAPPY when I make this! We got married Jamaica and for a whole week he ate nothing but jerk shrimp, chicken, pork. He totally loves it. Nothing that I have made really compares. I can’t wait to try this!!

      Erin, I know! I’m sure these would be great on a grill pan too :) Or a panini press which is what I always resort to if we are out of gas for the grill.

    How funny, last night for dinner I made grilled jerk chicken. The only difference they were not skewered. :) Lovely recipe Bri. My husband and I kept joking that we must be some sort of freaks, I used 5 scotch bonnet peppers and we still didn’t feel that it was spicy enough.

      Oh my gosh! That sounds so spicy! My husband made some margaritas one times with those peppers and I couldn’t stop coughing! It is definitely a different kind of heat.

    Jerk Chicken holds a special place in my heart. Years ago when I was an apprentice chef, Craig David (the singer) was performing at the venue I worked at, he gave us a very specific list of requirements, Jerk Chicken was one of them. When I went to check everything was okay, if he enjoyed his dinner, he said to me that it was the best feed he had had in months and months. I was tickled pink. :)

    We had a wine and cheese for our neighborhood last night and I am tired of seeing all the bean dips with chips and wanted something more substantive. So, I made the grilled jerk chicken! It was a hit! Mike grilled the kabobs and tasted them as they came off the grill and he said, “We’re not taking all of these to the party, we are keeping some here to enjoy.” Thanks, Bri!

    As a note, we are very busy, so I made the marinade and cut the chicken up the night before since it takes time. I didn’t combine and marinade and chicken until the next morning.
