Key Lime Pie Popsicles are perfectly tart, refreshing, and taste just like the classic Key Lime Pie. These Popsicles even have pieces of graham cracker in each bite.

Yay!  First of all, it’s Friday. Secondly, you made it through the workweek after a holiday. Is it just me or are the weeks after holiday weekends brutal?!

What do you have on tap this weekend?  I’ve got some quality time with my sister and mom on the calendar and I hope to hit the neighborhood pool. Are you a fan of an action packed weekend or do you prefer to take it slow?

It’s been a hot week here and I’ve been making popsicles! Ever since I got the popsicle mold a few weeks ago, I’ve been making popsicles like crazy which means I’ve been eating lots of popsicles too.

Growing up, one of my mom’s specialties was key lime pie. She still makes it for special occasions and nothing says dessert in the summer like a nice tart key lime pie. Key lime pie is one of Ben’s favorites too, so I knew I had to make key lime pie popsicles the minute my popsicle molds arrived and holy smokes you guys…these are spot on! They’re nice and tart, refreshing, and perfect for summer.

If you can find key limes, go ahead and use them. I couldn’t locate the baby limes, so I went ahead and used bottled fresh key lime juice which I found at the grocery store in the juice aisle.

Start by combining the lime juice, the sweetened condensed milk, and the half and half in a mixing bowl.

In a medium plastic bag, pound the graham crackers with a rolling pin until they are mostly crushed with some medium sized pieces.

Stir almost all of the crushed graham cracker into the key lime mixture. Then, Using a spoon, pour the mixture into the clean (and dry) popsicle molds. Fill the molds until they are almost full allowing room for expansion.

Add a touch more crumbled graham cracker to each mold if desired. Add the popsicle mold lid and the popsicle sticks. Freeze until frozen solid (about 4 hours or overnight).

Key Lime Pie Popsicles

Prep Time: 10 minutes

Cook Time: 4 hours

Total Time: 4 hours, 10 minutes

Yield: 10 2.5 oz popsicles

Ingredients

  • 1 cup fresh lime juice (either from key limes or bottled)
  • 14 oz can fat free sweetened condensed milk
  • ½ cup half and half
  • 9 graham crackers, crushed with a rolling pin

Instructions

  1. Start by combining the lime juice, the sweetened condensed milk, and the half and half in a mixing bowl.
  2. In a medium plastic bag, pound the graham crackers with a rolling pin until they are mostly crushed with some medium sized pieces.
  3. Stir almost all of the crushed graham cracker into the key lime mixture.
  4. Using a spoon, pour the mixture into the clean (and dry) popsicle molds. Fill the molds until they are almost full allowing room for expansion.
  5. Add a touch more crumbled graham cracker to each mold if desired. Add the popsicle mold lid and the popsicle sticks. Freeze until frozen solid (about 4 hours or overnight).

Notes

I used "cook time" for the amount of time these popsicles should freeze. Assembling the popsicles couldn't be easier.

    Bri these look so delicious and refreshing and I love your graham cracker crust spin.

    WE love visiting Key West for their Key Lime Pie but I bet your moms is so much better. I actually bought Key Lime colored pants (like a wild neon, what was I thinking?)

    So much healthier than the processed junk popsicles you buy at the store filled with artificial ingredients! Yay for summer snacks and desserts.

    Happy Friday, Bri! This week definitely seemed too long after the short holiday week. But we made it to Friday! These popsicles look amazing! I think my favorite part is the crushed graham crackers on the bottom. Love your creativity!

    I love key lime pie and these look so refreshing and delicious for the rest of summer! I know the key limes are difficult to find around here, but I’ve seen that exact juice at the grocery store… I’ll have to pick up a bottle the next time I shop. Thanks for sharing, Bri!
