Bacon, Corn, and Thyme Pizza

Bacon, Corn, and Thyme Pizza is a rich, creamy, cheesy white pizza made with fresh corn and thyme from the garden. This pizza is quick, easy, and perfect for lunch or dinner.

Bacon, Corn, and Thyme Pizza is a restaurant inspired recipe from one of our favorite local spots, Vin 909. I don’t even know where to begin, but I’ll try anyways. If it’s a weekend night, chances are you’ll find us at Vin909, a local wine bar with outstanding pizza. We love it there! We’ve been going since it opened a few years back and we are constantly craving their pizza. Vin909’s pizza menu changes often to showcase seasonal veggies, though a few of the pizzas remain on the menu year round.

Vin909’s pizza is as close as I’ve had to the real deal Italian pizza from our honeymoon and that’s saying something!

On to the pizza, which is perfect for a Friday!

Preheat the oven to 500 degrees. Cook the bacon. I typically do this in the oven or the microwave. The bacon takes about 7-10 minutes in the oven at 500 degrees. Don’t overcook it since it will continue to cook on top of the pizza. Chewy is about as far as you should take the bacon at this step.

Start by rolling out premade pizza dough on an oiled cookie sheet or pizza stone. If you’re making homemade, I especially love this recipe. Thinly slice the garlic and rub it over the dough with 1 tbsp olive oil.

Grate the Monterey jack cheese and spread it across the dough. Slice the corn kernels from two ears of corn and spread the corn on top of the cheese.

Chop the cooled bacon and add it to the pizza.

Strip the leaves of a few sprigs of thyme and add them to the pizza as well.

Bake for 15 minutes, rotating if necessary and adjusting baking time if you’re using a pizza stone.

Once cooked, enjoy!

Bacon, Corn, and Thyme Pizza

Ingredients

  • 1 premade pizza dough
  • 2 tbsp olive oil (1 tbsp for the cookie sheet and 1 tbsp for the dough)
  • 4 slices bacon, cooked
  • 2 garlic cloves, sliced as thin as possible
  • 1 ½ cups Monterey jack cheese
  • 2 ears of corn, corn sliced off cob
  • 4 sprigs thyme, leaves separated

    What a fun combo for pizza Bri! That pizza place sounds bomb too! I LOVE places that have real italian style pizza..and seasonal combos. I would never think to put corn on pizza. Can imagine it to be perfectly delicious! This post also reminds me i’ve never cooked bacon in the oven 😛 NEED to try lol Thanks lovely!

    A wine bar that sells pizza sounds like a dream come true! And so does this corn and bacon pizza! I’ve been using a lot of thyme lately and I bet it tastes amazing on this pizza! I just finished dinner, but I think I could still eat this entire pizza :)

    Yummo, would never have thought to add corn to a pizza, super fun for the tum! Its nice your local offers different combos too, all my local pizza places are part of chains, so not real special or even particularly seasonal. Great piccies, gonna add to my weeknight dinner menu, the corn available at the moment is amazeballs. :)
