Black Bean Cakes with Chipotle Sour Cream are a great weeknight meal. They’re tasty, quick, and healthy. In our house, this is a trifecta of perfection that can pretty much guarantee a dish will become a favorite.

Many people participate in Meatless Monday and we sometimes eat meatless on Mondays too, but usually as more of a coincidence than on purpose.

If you love Tex-Mex flavors like we do, you probably have all of the ingredients on hand.

Start by pulsing the tortilla chips in the food processor until they reach a breadcrumb consistency. A friend introduced us to Chia and Quinoa Chips from the Late July brand over the Fourth of July weekend and we love them. Feel free to use any variety you have on hand.

Start by draining and rinsing the black beans. Add 1 ½ cans of the beans to the food processor. Puree until they reach a paste consistency. Add the spices, lime juice, and green onion.

Once pulsed, remove the black bean puree into a bowl. Add the remaining whole beans and stir to combine. Add the egg and ½ cup of the ground tortilla chips. Stir until combined.

Now start making cakes! Add a spoonful of the mixture to your hands and form patties. If the cakes feel too wet, add the remaining tortilla crumbs to the mixture. Stir to combine, then form the cakes.

Once the cakes are formed, add the olive oil to a pan on medium to high heat. Add the cakes and cook for 3 minutes per side.

Flip for another 3 minutes then remove.

While the cakes cook, make the chipotle sour cream by combining the sour cream and the chipotle in adobo.

Top with chipotle sour cream, green onions, avocadoes, cilantro, and chopped tomatoes.

Black Bean Cakes with Chipotle Sour Cream

Ingredients

  • 2 cups tortilla chips, pulsed until finely ground (once pulsed, there will be ½ cup to 2/3 cup of tortilla chips)
  • 2 14 oz can black beans, drained and rinsed
  • 1 lime, juiced
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ to ½ tsp salt
  • ½ cup green onion, diced
  • 1 egg
  • 1 cup sour cream
  • 1 tbsp chipotle in adobo
  • avocado for topping
  • tomatoes for topping
  • cilantro for topping
