While we don’t make a lot of the same dishes over and over again, we are always looking for different recipes for grilled chicken breasts. They can be so boring but only if you let them. Coconut Curry Grilled Chicken has the power to change any preconceived notions you have of grilled chicken. I promise!

Don’t you think summer grilling is the best? There’s very little kitchen cleanup and there’s always an abundance of meats and veggies to grill. Dinner is fast which leaves plenty of time to do other things like games, going to the pool, or straight up relaxing.

We love the flavors of this coconut curry grilled chicken and you will too. The marinade is super easy and takes about 5 minutes to make. Marinade the chicken for and then throw it on the grill for a quick dinner. And, for the win…this marinade doubles as the sauce. Score!

Start by combining the light coconut milk, lime zest, lime juice, curry powder, cumin, salt, and soy sauce in a mixing bowl. Whisk until combined.

Pour half of the marinade in a separate bowl. This is the dipping sauce.

Add the chicken breasts to the marinade and marinade for 30 minutes to 8 hours.

Once you’re ready to grill, preheat the grill. When the grill is hot, spray it with cooking spray. Add the chicken breasts and grill roughly 5 minutes per side (depending on their size) or until cooked through.

Serve with rice, a wedge of lime, and cilantro.

Ingredients

  • 1 cup light coconut milk
  • 1 lime, zested and juiced
  • 3 tbsp curry powder
  • 1 tbsp cumin
  • ½ tsp salt
  • 2 tsp soy sauce
  • 4 chicken breasts

Instructions

  1. Start by combining the light coconut milk, lime zest, lime juice, curry powder, cumin, salt, and soy sauce in a mixing bowl. Whisk until combined.

Notes

Use the leftover coconut milk when you make the rice. My curry powder can be a little salty so I didn’t add much salt. Depending on the brand of your curry powder, you may want to add a touch more salt.

    Chicken is usually on the meal rotations in my house, although I always love finding new ways to spice it up, as plain chicken is so boring! And grilling is definitely the best in the summer! Also gives me a break from cooking since my husband takes care of that! :) I love that you used coconut milk and curry to flavor this chicken. Sounds so flavorful and easy to prepare!

      Annie, if you find curry intimidating this is a good start. It isn’t overpowering at all in this recipe. Cooking with curry paste and powder is much easier than expected 😉

    I don’t think I have ever had coconut and curry together, but I’m always looking for flavorful ways to dress up grilled chicken. It sounds amazing and I bet the chicken stays so moist being soaked in the coconut milk! It looks delicious!

    Stunning… Amazing…. Delicious! Big fan of the coconut & curry combo. I made this, but used coconut water (I was asked to review it, didn’t at all enjoy it on its own, had to get creative on ways to make it pop!) The sauce was a little more watery, so I cooked it out and reduced it a little, the taste was WOW! Very popular dish in my household.
    Thanks for making my cooking experiences so wonderful this week, my housemates are begging me to get my ‘Chef On’ more often now. LOL!
