Pumpkin Spice Almonds are the perfect fall snack. They’re slightly sweet and full of pumpkin spice flavor.

Happy Hump Day! Today’s recipe is super easy and perfect if you’re looking for a fall inspired quick and simple snack to keep you going through the day (or the week for that matter).

A few weeks ago, a co-worker handed me a tin of Pumpkin Spice Almonds when I was begging anyone and everyone for a mid-morning snack. You know what I’m talking about? Sometimes I can’t help but delve into my lunch at 11am and other days I try to find a snack. The almonds were quite tasty, but the minute I turned the tin around and saw what was in them…I cringed. Corn Syrup and a bunch of preservatives and sugar? Yikes.

I knew right away I could make them at home using the same method and technique from my Sweet and Spicy Almonds and Pecans. We loved that recipe and adding a pumpkin spice twist was a no brainer.

Preheat the oven to 350 degrees. Start by measuring out the almonds and placing them on a foil lined rimmed baking sheet. Roast the almonds for 20 minutes. Remove the tray from the oven.

In a medium mixing bowl, whisk an egg white plus 1 tbsp water until frothy. Add the almonds to the egg white mixture.

Measure the spices and sugars and place them in a small bowl. Add the spices and sugar to the almonds. Stir until combined.

Add the seasoned almonds back onto the baking sheet and bake for another 15 minutes. Stir once during that time.

When the almonds come out of the oven, they may not be crunchy, but they’ll harden as the cool.

Use your hands to break up any larger pieces. Store in an airtight container for 2-3 weeks.

Just try to keep them around that long! I know we couldn’t even come close…

Pumpkin Spice Almonds

Serving Size: 4 cups flavored almonds

  • 4 cups almonds
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 3 tsp pumpkin pie spice
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350 degrees.
  2. Start by measuring out the almonds and placing them on a foil lined rimmed baking sheet.
  3. Roast the almonds for 20 minutes. Remove the tray from the oven.
  4. In a medium mixing bowl, whisk an egg white plus 1 tbsp water until frothy.
  5. Add the almonds to the egg white mixture. Add the spices and sugar to the almond mixture. Stir until combined.
  6. Add the seasoned almonds back onto the baking sheet and bake for another 15 minutes. Stir once during that time.

Pumpkin Spice is easy to make at home. I used this recipe below which makes more than you'll need for this recipe. Use leftover pumpkin spice in other fall recipes! 4 teaspoons cinnamon 1 1/2 teaspoons ginger 3/4 teaspoon ground cloves 3/4 teaspoon nutmeg
