I warned you it was going to be Thanksgiving central for the next couple of weeks! Did I not?

But seriously, last year I was really late getting my recipes and dishes up so this year I swore I was going to do a better job getting Thanksgiving recipes posted ahead of time so you can include them in your menu planning.

Oh wait…you’re not dreaming of the Thanksgiving feast three weeks ahead? Is that just me? (((cringing)))

I know I just posted a Brussels sprouts recipe, so I really hope you like them! And if you’re still unsure about Brussels sprouts, then this is another great way to try them…Once shaved or sliced thinly, Brussels taste like cabbage and have a great crunch.

We officially made Brussels Sprouts a part of our Thanksgiving menu two years ago and about half way through the meal, my mom made everyone guess the mystery ingredient in the salad. No one even knew it was Brussels Sprouts! All of my grandparents, yes I still have all 4 (so blessed), and all of our other guests grew up eating gross boiled Brussels Sprouts so they were shocked to find out…especially because they loved the salad!

Using a mandolin for this task really speeds things up. No mandoline? That’s fine…just be careful slicing the Brussels by hand. Or better yet, buy them pre-shredded (especially if you’re hosting 40 for Thanksgiving).

Start by slicing the bottom from the sprout and peeling the outer leaves off the sprouts. Then, slice the Brussels sprouts as thin as possible using either a knife or a mandoline. Then, use your hands to scrunch them for great texture (kind of like gelling your hair in the ‘80’s…ya feel it?!)

Put the shredded Brussels sprouts in a salad bowl. Add the dried cranberries and the feta. Dice a honeycrisp apple and add it to the salad. If you’re making this ahead, you’ll want to wait to do this until just before serving so the apple doesn’t get brown.

In a small saucepan, toast the walnuts over medium heat for 1-2 minutes until just fragrant. Careful- they burn easily and that will make them bitter.

Add the toasted walnuts to the salad bowl.

In a small mixing bowl, add the diced shallot, orange juice, lemon juice, honey, olive oil, salt, and pepper. Whisk to combine.

Just before serving, dress the salad. Toss and serve. You will likely have extra dressing, so just store it in the refrigerator for a few days or use it to add extra dressing to any leftovers.

Ingredients

  • 1 lb brussels sprouts, shaved and sliced thinly
  • 1/3 cup dried cranberries (I used craisins)
  • 1/4 cup walnuts, toasted
  • 1/3 cup feta cheese
  • 1 honeycrisp apple, diced
  • 1 small shallot, diced
  • 1 garlic clove, minced
  • 1 navel orange, juiced
  • 1/2 lemon, juiced
  • 2 tsp honey
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

    Okay, definitely going to need to try this shaved brussels sprouts in salad thing. I’ve seen a few salads made with shaved brussels now, with people telling me that I’ll like them even if I don’t like brussels sprouts! I guess I should just listen and try it! Because I’ve only ever had them gross and boiled or steamed and am just not a fan. They do look entirely different in salad form though so I’m going to have to give them a try! Thanks for a great looking recipe!

    Oh how I love shaved brussel sprouts. They already like itty, bitty baby cabbages, and shaving them makes them like itty, bitty coleslaw. It’s too cute! I did have a bad experience the last time I was shaving them with my mandoline a little too furiously and got a nice cut on my finger. Ouch! But I’m going to brave it again to make this delicious salad!
