Easy Creamed Spinach | Bites of Bri  On to today’s recipe for Easy Creamed Spinach. Creamed Spinach is a dish I love and it’s the perfect addition to your family holiday feast. Growing up, Creamed Spinach was such a treat for my sister and me. We jumped at any chance to have it, which usually meant that we were eating out…score!

These days, I’m making Creamed Spinach at home and guess what? It’s easy! Easy Creamed Spinach requires no roux, only a tiny bit of butter (1 tbsp!), and 5 ingredients plus salt and pepper and can I mention ONE POT (plus a bowl). 🙂

This Easy Creamed Spinach will make you a rockstar this holiday. I know I’m planning on making it as my contribution at my in-laws Christmas dinner. I already cannot wait to eat it again in just two weeks. I’m telling you…I couldn’t get enough. This recipe serves 4 but I couldn’t stop eating all of the creamed spinach!!! It was so…yum.

Preheat the oven to 350 degrees.

Start by washing the spinach. You may need to do this in two batches or so, because unwilted spinach takes up so much space! Submerge the spinach in a bowl of cold water and use your hands to move it around a bit.

Place the deep pan you plan to use near the sink and simply shake some water off before adding the spinach to the pot. Fill the pan with spinach and heat over medium heat. Stir until all of the spinach is wilted.

If you need to wash the spinach in batches, continue washing while the first batch of spinach wilts and then add more spinach to the pot. Continue until all of the spinach is wilted. This shouldn’t take more than 5 minutes or so. Once the spinach is wilted, use tongs to move the spinach to a bowl. I used the same bowl I used to wash the spinach. I simply rinsed it really well prior to adding the spinach back in.

Wipe the pan clean. Over medium heat, melt the butter. Add the diced shallots. Stir to combine. Sauté for 3 minutes until translucent. Add the minced garlic and stir to combine. Cook for 1 more minute. Add the red pepper flakes, nutmeg, salt, and pepper. Turn the heat in the pan off.

Place all of the spinach in a kitchen towel or in a paper towel (a couple layers thick). Squeeze as much excess water as you can from the spinach.

Add the spinach back to the pot, breaking up any large clumps. Add the cubes of cream cheese and stir until melted.

Add half of the freshly grated parmesan cheese, reserving ½ cup for the top of the casserole. Taste to make sure it is seasoned properly. Add more salt and pepper if desired. Stir to combine and pour the creamed spinach into a 9X9 or round casserole dish.

Bake for 25 minutes or until golden and bubbly.

And since it’s spinach with just a touch of richness, eat all you want! That’s my advice. Take it or leave it 🙂

Ingredients

  • 2 lbs fresh spinach
  • 1 tbsp butter
  • 2 large shallots, diced (about 1 cup of shallots)
  • 4 garlic cloves, minced
  • 1/8 tsp nutmeg
  • 1/8 tsp red pepper flakes
  • Salt to taste
  • Pepper to taste
  • 4 oz cream cheese, cubed into pieces
  • 1 cup freshly grated parmesan cheese, divided in half

Instructions

Notes

To use frozen spinach, skip the sautéing of the spinach. Thaw frozen spinach and drain any excess water using the same method as above. Simply sauté the shallots and garlic, season, and then add the thawed and drained spinach. Continue with the recipe. To make ahead, follow all of the steps except wait to bake the Creamed Spinach until just before serving. Bake until bubbly (this may take a few extra minutes).

    Bri — I love your blog (& recipes) — have made several of them. The creamed spinach recipe list doesn’t mention how much cream cheese — it’s in the instructions but not the list of ingredients:) Do you use 8 oz of cream cheese?
