White Chocolate Pretzel Brittle

After this past weekend, I am in full holiday mode. I spent all day Saturday baking delicious treats.

I’ve been making this brittle for YEARS and I’m a little embarrassed how easy is it to make. There’s no one that loves this brittle more than my sister. I usually skip the holiday wrapping for her batch and give it to her in huge bags. For her, it is function over form…I realize I’m fueling her addiction. For our friends, I usually find some cute holiday gift wrapping at Target so the goods look as good as they taste.

This  recipe is flexible, so feel free to make it your own depending on the pretzel to chocolate ratio you enjoy.

Due to the simplicity of this recipe, it would be great to make it with kids as a cooking project. Other than melting the white chocolate, the recipe requires no baking.

Start by setting up your double boiler. I used a large mixing bowl and a medium sized saucepan to create the effect. Add a few inches of water to the bottom of the saucepan, but not enough water that it will touch the mixing bowl bottom.

Allow the water in your double boiler to simmer.

Once the water is simmering, add 2 bags of white chocolate to the mixing bowl. Allow the chocolate to melt a little, then begin stirring and continue stirring until the chocolate is about 75% melted.

Once 75% melted, remove the mixing bowl from the heat and continue stirring. It should be completely melted within a few seconds.

In your largest mixing bowl, pour the entire bag of pretzels.

Then add half of the white chocolate. Since the mixture becomes a little tough to stir, make sure to pour the white chocolate in a few different spots to hedge your chances of mixing well.

It doesn’t matter if the pretzels break while you’re stirring, because once the brittle hardens, you’ll end up breaking them into pieces to package them up. Once partially mixed, add the other half of the white chocolate. Then, add the holiday m&m’s. Stir to combine.

Lay out foil on your counter so that you can spread the white chocolate covered pretzels out to harden. Pour the pretzels in a single layer on the sheets of foil.

Allow the white chocolate brittle to harden (it shouldn’t take more than an hour). Break it into pieces and package it up. You can use clear holiday gift bags specifically for food or you can box it up with other goodies. This brittle is a crunchy, sweet treat perfect for the holidays.

White Chocolate Pretzel Brittle is a holiday treat made with pretzels coated in rich white chocolate and sprinkled with holiday M&M's. This treat is delectable and addicting!

Ingredients

  • 1 lb small pretzels
  • 2 11 oz bags white chocolate chips
  • 1 large bag holiday m&ms (I used about half of this bag)

Instructions

  1. Start by setting up your double boiler. I used a large mixing bowl and a medium sized saucepan to create the effect. Add a few inches of water to the bottom of the saucepan, but not enough water that it will touch the mixing bowl bottom.
  2. Lay out foil on your counter so that you can spread the white chocolate covered pretzels out to harden.
  4. In your largest mixing bowl, pour the bag of pretzels and then add half of the white chocolate. Since the mixture becomes a little tough to stir, make sure to pour the white chocolate in a few different spots to hedge your chances of mixing well. It doesn't matter if the pretzels break while you're stirring, because once the brittle hardens, you'll end up breaking them into pieces to package them up. Once partially mixed, add the other half of the white chocolate. Add the holiday m&m's. Stir to combine and then pour the pretzels in a single layer on the sheets of foil.
  5. Allow the white chocolate brittle to harden (it shouldn't take more than an hour). Break it into pieces and package it up. You can use clear holiday gift bags specifically for food or you can box it up with other goodies.

Notes

You can also use white chocolate bars in this recipe. Chop the bars into uniform pieces and then melt them using the same method as stated above.
