Easy Two Bean Beef Chili is super simple and quick to make, hearty, and loaded with protein. If I had to name a favorite chili, this might just be it!

Happy Monday friends! If it the forecast wasn’t calling for a blizzard, I might have a hard time believing that it is the end of January. Where did January go? Between an especially crazy work month and a family ski trip, January blew by!

Sunday’s big game has me craving chili big time. You can never have too many chili recipes. Chili is so versatile, which is one of the reasons I absolutely love it. If you need proof, you can take a spin through the Bites of Bri chili archives…we’ve got White Chicken Chili, Beef and Bean Chili, and Buffalo Chicken Chili. YUM!

 Choosing a favorite chili is impossible but this one has my heart! This Easy Two Bean Beef Chili is super simple and quick to make, hearty, and loaded with chickpeas (my favorite bean in the whole world) :)

Make this chili for the big game, a weeknight dinner, or to warm up after some shoveling… I know you’ll love it too.

Start by browning the ground beef in a soup pot. I used lean ground beef and simply used a large spoon to drain any excess fat.

Once the beef is cooked through, add the garlic, cumin, oregano, chili powder, and cayenne pepper. Stir to combine.

Add the can of tomato sauce and the whole peeled tomatoes. Using a wooden spoon, break up the tomatoes so they are bite-sized. Stir to combine.

Add the chickpeas and pinto beans. Stir to combine.

Season the chili with salt to taste. Simmer for 30 minutes to 1 hour.

Top with pickled jalapeños, sour cream, and shredded cheese for the ultimate dinner.

And if you happened to have just a little chili leftover, it’s delicious inside a baked sweet potato. Hypothetically speaking, of course 😉

Ingredients

  • 1 1/2 lbs 90% lean ground beef
  • 1 tsp garlic powder
  • 1 ts[ ci,om
  • 1 tsp oregano
  • 1/4 tsp cayenne pepper
  • 2 tbsp chili powder
  • 1 15 oz can tomato sauce
  • 1 28 oz can whole peeled tomatoes
  • 1 14 oz can chickpeas, drained and rinsed
  • 1 14 oz can pinto beans, drained and rinsed
  • salt to taste
  • sour cream, cheese, cilnatro, and pickled jalapenos for topping

    I also can’t believe it is almost the end of January too! And we are nowhere near getting a blizzard! However, I would still love to curl up with a big bowl of this chili! It is one of my favorite foods, cold weather or not!

    I can’t believe January is gone either, and I love chili! I have never, ever added chickpeas to chili, so I love that idea! It’s going to happen very soon. :)

    Who doesn’t like a nice, piping hot bowl of chili especially with the weather that we have been having as of late. This chili looks amazing and I love your idea of scooping the leftovers on a nice baked potato. Comfort food at its best.
