How was your weekend? I hope it was great. We finally caught a break and got some nice weather. It was nearly 60 degrees both Saturday and Sunday which made for some outdoor time and sunbathing. Just kidding about the sunbathing part, but it really was so nice and warm. It felt great to get some vitamin D.

I have to admit, I kind of got my hopes up that Spring weather was right around the corner.  And while the calendar indicates that the first day of Spring and my birthday(!!!) are just a few weeks away, Mother Nature has other plans for us this week in the form of….more snow(!!!) and another Polar Vortex. Guys, will the snow ever stop? I’m starting to think the polar vortex might not ever leave. Someone tell it to go home! It visited us again last weekend and made for some frigid, I mean frigid cold temperatures. It has been brutal! On Wednesday, it was 16 degrees at 2pm. What’s up with that?

The good news is that we are almost done with January and as we head toward February, we are one step closer to warmer temperatures, spring weather, and temperatures above freezing. I hope.

Lasagna Soup

As a kid, my mom would always ask what we wanted for our birthday dinner and my answer was always the same. It was lasagna each and every time. I’m sure my mom held her breath every time she asked wishing and hoping my love for the dish with hours of assembly time would have passed. But, no. It was always my special request and special it was because my mom did not make it often.

Even as an adult, I absolutely adore lasagna. I don’t make it often either, but when I make a batch of bolognese sauce, I always make extra so that I can freeze some and save it for the next batch of lasagna.

Well friends, I’m thrilled to tell you that there’s a way to emulate the taste of lasagna without all the calories, fat, and TIME! It’s lasagna in soup form and it is deeeelicious.
