What a weekend! Ours was jam packed with activities from Friday night to Sunday and now I feel like I need another weekend for the recovery. Whew! I’m exhausted!

We also hit the farmer’s market for our first time this season after missing the first one last week when we were out of town. I really struggle to make delicious salads at home sometimes. Not because it’s complicated…we all know that it is not. But I lack creativity when it comes to salads at home. When my grandmother dropped off two, yes TWO, large grocery bags of bell peppers fresh from their garden, I knew I had to make some Mexican food. In addition to freezing a few bags of sliced and diced peppers for soups and stews, Enchiladas were an easy choice.
