I hope everyone had a great Father’s Day weekend! What did you do? How did you celebrate the fathers in your life? We celebrated my dad with a little pulled pork barbecue and some fixins…in other words, his all time favorite meal! And it didn’t disappoint my grandfather either. He told me he’d been smiling ever since he heard what was on the menu.

On to other news…Bites of Bri got a little makeover this past weekend. It was something I’d been putting off for quite some time. I finally bit the bullet and installed this snazzy new theme that is built specifically for food blogs. I’ve worked quickly to fix some of the most important parts of the site but there may be a few little glitches. I hope you’ll excuse them over the next week or so while I get everything worked out. I made these sliders on Saturday and we absolutely devoured them for lunch. It’s no secret that we take a break from our grill over the winter. It gets put away long before Christmas and usually makes its first debut sometime in March. With the temperature hovering around 70 (yes, 70!!!) on Saturday, it was time. Overdue. Necessary.

You see, I usually will venture to the back patio sometime over the course of Winter for a little grilling. A 50 degree day is enough to get me out there and we usually have plenty of those days, but not this Winter. This Winter has been br-uuuuu-tal! Terribly cold and unusually snowy. As I thought about it last week, I realized I hadn’t even stepped foot on the back patio except for once in January when we decided to do the ruler trick and measure the snow during one of the many snow storms. To say it’s been awhile would be an understatement, so it felt awesome to fire that grill up. I sat in the adirondack chair while waiting for these little sliders to cook. Cheeseburgers, vitamin D, and relaxation on the back patio….Here comes summer, even if it did snow AGAIN yesterday!

I have to be honest and admit that Irish food isn’t really a personal favorite. Growing up, my parents loved going to Irish pubs to grab a bite and my meal of choice was, wait for it….a cheeseburger. Now that I’m older and my tastebuds have matured, I’ve expanded my Irish horizons a little. I’m still not a fan of corned beef…I think it’s the texture but I’ve really come around on Shepherd’s Pie. Ground beef, vegetables, and mashed potatoes in casserole form. Yes and yes. I love this dish. I also love celebrating with green beer!

Lasagna Soup

As a kid, my mom would always ask what we wanted for our birthday dinner and my answer was always the same. It was lasagna each and every time. I’m sure my mom held her breath every time she asked wishing and hoping my love for the dish with hours of assembly time would have passed. But, no. It was always my special request and special it was because my mom did not make it often.

Even as an adult, I absolutely adore lasagna. I don’t make it often either, but when I make a batch of bolognese sauce, I always make extra so that I can freeze some and save it for the next batch of lasagna.

Well friends, I’m thrilled to tell you that there’s a way to emulate the taste of lasagna without all the calories, fat, and TIME! It’s lasagna in soup form and it is deeeelicious.
