Chicken with Tomatoes, Olives, and Capers

For those of you that know me well, you know this about me: I go to restaurants with my appetizer and entree chosen earlier that day (ok, sometimes earlier that week) off the restaurant’s website. I cannot help it…dinner is something I look forward to enjoying each and every day. Over the years, there have been a few disappointing moments when my chosen dish has been removed from the menu and there have also been a few surprises from last minute switcheroos where I veered off course.

So when we decided to go out to dinner a few weeks ago, I already knew what I wanted to order. And at this little Greek restaurant, I never stray. I always order the exact same thing because I. LOVE. IT. So, imagine my disappointment when the waiter brought me the wrong item. I’m pretty understanding about these issues that sometimes arise, and I simply asked for the waiter to correct it. No big deal, right? Except it kind of became a little problematic when he told me that my “order might be more like a to-go order.” I’m sorry…whaaaaaat? It sort of left a bad taste in my mouth. This chicken is so simple to make, and I imagine it is even faster when you make it multiple times per evening.

After a holiday eating extravaganza, I found myself craving a lighter chicken dish for dinner and knew I would make what the restaurant calls Chicken Mediterranean or Chicken with Tomatoes, Capers, and Olives. It turned out so well that I think we will be adding this to our list of favorites. Even better, it is made up of ingredients we always have on hand.
