Salads are one of my favorite items to order when we go out to eat. Why, you ask? Because it always seems like restaurants have some really creative combinations. I really struggle to make delicious salads at home sometimes. Not because it’s complicated…we all know that it is not. But I lack creativity when it comes to salads at home. Since I usually make them before I head to work, simplicity is the name of the game and then I usually encounter regret when I look at my sad salad at lunch and wonder why I didn’t put a little more thought into it.

Today, I have a great salad that is packed with both protein and vegetables. It can be assembled ahead of time for the week’s worth of lunches or a few hours beforehand if you’re having company over.

Happy Monday! Did you have a good weekend? Friday we hosted a big party for Ben’s 30th birthday. 30?!  Good thing he’s got a few years on me and yes, I remind him of that often. The party went off without a hitch and the birthday boy had a great time, so mission accomplished! Ben is a huge fan of margaritas, so that’s what he wanted and that’s what I delivered. More to come on that later this week. Anyways, we spent the rest of the weekend recovering and relaxing which was just perfect.

These lettuce wraps were the perfect meal for Sunday. After spending tons of time last week cooking and cleaning for the party, I was in the mood for something quick and easy. Thai is one of our favorite restaurant foods, but it wasn’t until I made these Chicken Lettuce Wraps that I realized how easy Thai food can be to make at home. And as one of our favorite ethnic foods, this was great news!
