A couple of days ago, I taught you guys my trick for the easiest shredded Chicken and Chicken Broth. One of my favorite ways to use the shredded chicken is in any Mexican dish.

When my grandmother dropped off two, yes TWO, large grocery bags of bell peppers fresh from their garden, I knew I had to make some Mexican food. In addition to freezing a few bags of sliced and diced peppers for soups and stews, Enchiladas were an easy choice.
