Strawberry Blueberry Crisp

Strawberry Blueberry Crisp is a berry packed dessert with a sweet, crunchy oat topping that goes perfectly with vanilla ice cream. This dessert is super simple to make and bakes for only 30 minutes before it is ready to serve.

Berry season might be one of the best parts of summer. I don’t know what’s available where you live, but chances are strawberries are on the agenda and blueberries too.

Fresh, local strawberries are so good. I cannot stop eating them! I force fed them to my family last year just to prove the drastic difference that exists between store bought berries and the kind you find at the farmer’s market. There really is no comparison. Store bought berries are often hard and flavorless. Farmer’s market berries are soft, juicy, and sweet like candy.

Vanilla Brown Sugar Granola with Dried Apricots and Cherries

VanillaBrownSugarGranolawithDriedCherriesandApricots | Bites of Bri

So, now that we are a few days into 2014, are your resolutions made? What are they? I’d love to hear them.

I’m not really a huge fan of resolutions. Trust me, it is not that I couldn’t benefit from them. I certainly could, but the idea of creating a list isn’t something I’m big on. It gets hard to remember them all and stick to them!

Breakfast is something we are going to continue to work on around here. I’m usually pretty good about eating breakfast and Ben has recently hopped on the breakfast bandwagon. Thank goodness! He’s been on and off about breakfast for years and has finally found something that even he can manage to grab on the way out the door, though he definitely likes it better when I make it for him. I mean, really?! Scoop granola, scoop yogurt. And you’re done. Whatever…I’m not complaining. I’m just so happy that he finally got on board with breakfast. We all know it is the most important meal of the day. I don’t know about you, but I can definitely tell a difference in my eating habits throughout the day if I skip breakfast.

Carmelitas

Carmelitas | Bites of Bri

As I kid, I remember baking frequently with my mom and sister. If we were baking with caramel, our job was to unwrap the individual caramel squares. As an adult, I realize that this was probably a ploy by my mom to shrug off the annoying and very tempting task of dealing with all of those caramels. We were baking together and it was really fun! And also really delicious for my sister and I considering that a small portion of the caramels made it into the recipe and the rest went into our mouths. I loved caramel as a kid and still do to this day. Anything with caramel is better. Don’t ask me to choose between caramel and hot fudge on my sundaes. I’ll take both! Caramel and chocolate is a winning combination and that combination makes these carmelitas outrageously good. So good in fact, that they sold out when I took them to a party this past weekend.

I simply have no self control when it comes to brownies, cookie bars, and lately…these carmelitas. These are ridiculously amazing- super rich, fudgy, and ooey gooey with caramel.

Granola Bites 2 | Bites of Bri

They say breakfast is the most important meal of the day. Sometimes convenience comes before nutrition and that doesn’t have to be the case.

Mornings in our house can be hectic to say the least. Between early morning workouts and long commutes, breakfast can be a challenge. These granola bites are easy to grab on the go, eat in the car, or munch on for a mid-morning snack.
