Last stop for Grilled Cheese Month…Chicken Fajita Grilled Cheese. So I think you know by now that I’ve taken Grilled Cheese Month very seriously. I’ve given it lots of thought over the past couple of weeks, and now that April is almost over, this will be the final recipe for Grilled Cheese…for now that is.

I was inspired to make Chicken Fajita Grilled Cheese after going out with my family to a Mexican restaurant a few weeks ago. Chicken Fajitas are always what I order. Rarely do I stray from my favorite Mexican meal. The best part of ordering Chicken Fajitas? The leftovers! Our go to Mexican restaurant seriously gives you 2-3 meals worth of food, which is awesome because I love eating the leftovers for lunch. So, as I was enjoying the leftovers the next day, I was thinking about Grilled Cheese recipes when the light bulb when off over my head (just like in the cartoons). And, voila! Chicken Fajita Grilled Cheese was born!

How was your weekend? I hope it was great. We finally caught a break and got some nice weather. It was nearly 60 degrees both Saturday and Sunday which made for some outdoor time and sunbathing. Just kidding about the sunbathing part, but it really was so nice and warm. It felt great to get some vitamin D.

I have to admit, I kind of got my hopes up that Spring weather was right around the corner.  And while the calendar indicates that the first day of Spring and my birthday(!!!) are just a few weeks away, Mother Nature has other plans for us this week in the form of….more snow(!!!) and another Polar Vortex. Oh boy!
