The last couple of weeks have been craaaaaazy. So in an effort to find a quick, easy, and light dinner the other night, I threw together this quick salsa verde chicken. Once the cooking time was complete, I knew I had found a winner.

Winner winner chicken dinner. Shameless, aren’t I?

But seriously. This chicken would be great for a super bowl party, Mexican fiesta, or Cinco de Mayo festivities. All of the above. Add this chicken to tacos, enchiladas, salads and you will not be sorry. It is hard to imagine how something with so few ingredients can be loaded with so much flavor.
