Guys, will the snow ever stop? I’m starting to think the polar vortex might not ever leave. Someone tell it to go home! It visited us again last weekend and made for some frigid, I mean frigid cold temperatures. It has been brutal! On Wednesday, it was 16 degrees at 2pm. What’s up with that?

The good news is that we are almost done with January and as we head toward February, we are one step closer to warmer temperatures, spring weather, and temperatures above freezing. I hope.

January to me is all about lighter menu options and warm, filling meals. How is that possible you ask? Soup! It’s all about the soup. I love soup and I find that it makes the perfect warm, hearty meal for the cold of winter.
